2 tablespoons Butter Olive Oil
1 cup whole buttermilk
2 teaspoons vanilla
½ cup flour
½ cup sugar, plus 1 tablespoon to finish
¼ teaspoon salt
2-3 cups figs, halved
2 tablespoons confectioners sugar
Preheat oven to 400 degrees.
Butter Olive Oil a shallow baking dish or cast-iron skillet.
Combine eggs, buttermilk, vanilla, flour, 1/2 cup of sugar, and salt in blender and blend until smooth. Pour into prepared dish. Arrange figs in batter and sprinkle top with remaining sugar.
Bake for 45 minutes or until puffed and golden. Cool and sprinkle with confectioners sugar to serve.
