2 tablespoons Barrel Aged Red Wine Vinegar
½ teaspoon sugar
1 tablespoon Hojiblanca Extra Virgin Olive Oil
2 large cucumbers, grilled whole then sliced into bite-sized pieces
3 cups sun gold tomatoes, halved
½ small red onion, julienned
Salt and black pepper
In large mixing bowl, mix Barrel Aged Red Wine Vinegar, sugar, and Hojiblanca Extra Virgin Olive Oil. Add cucumbers, tomatoes, and red onions. Season to taste and serve.
