1 pound cheddar cheese, cubed
1 garlic clove
1 teaspoon ground mustard
½ teaspoon worcestershire
¼ teaspoon cayenne
2 teaspoons Baklouti Green Chile Olive Oil
1 cup beer, such as a lager or brown ale
In the bowl of a food processor, combine all ingredients and pulse several times until cheese begins to break down. Run food processor until mixture is completely smooth and creamy, about 4 minutes. Refrigerate overnight to allow flavors to meld, but return to room temperature before serving.
